Easy Homemade Olivier Salad Recipe

   Olivier salad, also known as Russian salad, is a traditional dish that originated in Russia and has become popular in many countries. It is a type of salad typically made with boiled potatoes, carrots, eggs, pickles, onions, and boiled chicken or ham, all mixed together with mayonnaise. 



In some variations, peas, apples, or other vegetables may be added. The salad is usually chilled before serving and is a staple at holiday meals and celebrations, particularly during New Year's and Christmas in Russia and some Eastern European countries.


Olivier salad has evolved over time, with many regional variations depending on local preferences and ingredient availability. The original recipe, created in the 1860s by Lucien Olivier, a French chef in Moscow, included more luxurious ingredients such as grouse, caviar, and crayfish. 


However, over the years, the salad became simpler and more accessible, with common substitutions like chicken, bologna, or even turkey instead of the more expensive meats. The key characteristics of Olivier salad are its creamy texture from the mayonnaise and the combination of crunchy and soft vegetables, along with the savory flavors from the pickles and proteins. 



While traditionally made with homemade mayonnaise, many modern versions use store-bought versions for convenience. Olivier salad holds cultural significance in Russia, where it is a symbol of festive occasions and family gatherings. 


In addition to Russia, variations of this salad are also found in countries such as Ukraine, Armenia, and other former Soviet republics, each with their own tweaks to the ingredients.


Despite its simple appearance, Olivier salad remains a beloved dish, often passed down through generations and enjoyed at celebratory meals. Here is a traditional recipe for making Olivier salad (Russian salad):


Ingredients:

- 4 medium potatoes

- 3 medium carrots

- 5 hard-boiled eggs

- 1 cup cooked chicken or ham (optional, or use bologna)

- 1 cup frozen peas (thawed)

- 4-5 medium pickles or 1/2 cup of pickle relish

- 1 small onion (optional)

- 1 cup mayonnaise (adjust to taste)

- Salt and pepper to taste


Instructions:

1. Cook the vegetables 

- Boil the potatoes and carrots in a large pot until they are soft (about 15-20 minutes). Let them cool, then peel and dice them into small cubes.

   

2. Prepare the eggs and chicken

- Boil the eggs until hard (about 10-12 minutes). Cool, peel, and dice them.

   

- If using chicken or ham, chop it into small pieces (alternatively, you can use bologna).


3. Prepare the other ingredients 

- Dice the pickles and onion (if using).

   

- Drain the peas if using canned peas, or cook frozen peas according to package directions and drain.


4. Combine the ingredients 

- In a large bowl, combine the diced potatoes, carrots, eggs, chicken or ham, peas, pickles, and onion.


5. Make the salad

- Add the mayonnaise and gently mix everything together. Be careful not to mash the ingredients.

   

- Season with salt and pepper to taste.


6. Chill

- Cover the salad with plastic wrap or a lid and refrigerate for at least 1-2 hours before serving. This allows the flavors to meld.


7. Serve

- Serve chilled as a side dish or a main dish for festive occasions.
