Easy Kunafa Cheesecake Recipe

Kunafa cheesecake is a delightful dessert that combines elements of traditional Middle Eastern kunafa (a crispy pastry made from thin noodle-like strands) with the creamy richness of cheesecake.

The base typically consists of baked or fried kunafa, which is layered with a smooth cheesecake filling. It’s often topped with a drizzle of syrup, nuts, or fruit, making it a rich and indulgent treat that beautifully marries textures and flavors.

To prepare kunafa cheesecake, the kunafa is usually shredded and mixed with butter, then pressed into a springform pan to create a crust. The cheesecake filling is made from cream cheese, sugar, eggs, and sometimes flavored with vanilla or rose water.

After baking, the cheesecake is cooled and often drizzled with a sweet syrup, such as simple syrup infused with orange blossom or rose water, to enhance its flavor. Some variations also include toppings like crushed pistachios, almonds, or shredded coconut for added texture and visual appeal.

This dessert is popular in Middle Eastern cuisine, celebrated for its unique combination of crunchy and creamy elements, making it a favorite at celebrations and gatherings. Kunafa cheesecake can also be customized in various ways.

For instance, some recipes incorporate different flavors into the cheesecake filling, such as chocolate, fruit purees, or spices like cardamom. Additionally, the level of sweetness can be adjusted based on personal preference or dietary needs.

The use of different syrups or even fresh fruit can add layers of flavor that complement the rich cheese filling. Presentation is key, so it's often served chilled, sliced into wedges, and garnished with extra nuts or a sprinkle of cinnamon.

This stunning dessert not only tastes delicious but also makes for an impressive centerpiece at any gathering. Whether enjoyed at a festive occasion or as a special treat, kunafa cheesecake is sure to delight anyone who loves the interplay of creamy and crispy textures.

Here’s a simple recipe for making kunafa cheesecake:

For the Kunafa Crust

- 300g kunafa (shredded phyllo dough)

- 150g unsalted butter, melted

- 2 tablespoons sugar

For the Cheesecake Filling

- 450g cream cheese, softened

- 150g sugar

- 3 large eggs

- 1 teaspoon vanilla extract

- 200ml sour cream or heavy cream

- 1 tablespoon rose water (optional)

For the Syrup

- 1 cup sugar

- 1/2 cup water

- 1 teaspoon lemon juice

- 1 tablespoon rose water or orange blossom water (optional)

Instructions:

1. Prepare the Kunafa Crust

- Preheat your oven to 350°F (175°C).

- In a large bowl, mix the shredded kunafa with melted butter and sugar until well combined.

- Press the mixture into the bottom of a greased 9-inch springform pan to form an even layer.

- Bake for about 10-15 minutes, or until golden brown. Allow to cool.

2. Make the Cheesecake Filling

- In a mixing bowl, beat the cream cheese and sugar until smooth.

- Add the eggs one at a time, mixing well after each addition.

- Stir in the vanilla extract, sour cream, and rose water (if using) until combined.

- Pour the cheesecake filling over the cooled kunafa crust.

3. Bake the Cheesecake

- Bake the cheesecake in the preheated oven for about 45-50 minutes, or until the edges are set and the center is slightly jiggly.

- Turn off the oven and let the cheesecake cool inside for about an hour to prevent cracking.

4. Prepare the Syrup

- In a saucepan, combine sugar, water, and lemon juice. Bring to a boil, then reduce heat and simmer for about 10 minutes until slightly thickened.

- Remove from heat and stir in rose or orange blossom water. Let it cool.

5. Finish the Cheesecake

- Once the cheesecake is completely cool, refrigerate it for at least 4 hours or overnight.

- Before serving, drizzle the cooled syrup over the top and garnish with crushed pistachios or almonds if desired.

6. Serve

- Slice and enjoy your delicious kunafa cheesecake!

This dessert is rich and flavorful, perfect for special occasions or as a delightful treat.
