Burnt Cheesecake Recipe

Burnt cheesecake, often associated with the Basque region of Spain, is a rich, creamy dessert characterized by its dark, caramelized top. Unlike traditional cheesecakes, it has a unique, slightly smoky flavor due to the high baking temperature, which creates a distinctive crust while keeping the interior soft and custardy.

It’s typically made with simple ingredients like cream cheese, sugar, eggs, and heavy cream, resulting in a decadent and indulgent treat. To make burnt cheesecake, the process generally involves blending the cream cheese until smooth, then adding sugar, eggs, and heavy cream to create a silky batter.

The mixture is poured into a springform pan lined with parchment paper and baked at a high temperature, usually around 400°F (200°C), until the top is deeply browned and the edges are set while the center remains slightly wobbly. Once cooled, the cheesecake is often chilled in the refrigerator to enhance its creamy texture.

It's typically served plain, allowing the rich flavors to shine, but some variations may include toppings like fresh fruit, caramel, or a dusting of powdered sugar. The contrast between the burnt exterior and the creamy interior makes it a unique and delicious dessert option.

After chilling, the burnt cheesecake can be sliced and served. The outer layer offers a slightly crisp texture, while the inside remains luxuriously smooth and creamy. The flavors are rich and slightly tangy, balanced by the sweetness of the sugar. Burnt cheesecake is versatile and can be adapted to various tastes.

Some people like to add citrus zest for a hint of brightness, while others incorporate spices like vanilla or even chocolate. When serving, it pairs wonderfully with a dollop of whipped cream or a scoop of ice cream, and it’s a delightful contrast with fresh berries or a fruit compote.

This dessert has gained popularity worldwide, making it a favorite in many bakeries and restaurants, celebrated for its simplicity and bold flavors. Here’s a simple recipe for making burnt cheesecake:

Ingredients:

- 2 (8 oz) packages cream cheese, softened

- 3/4 cup granulated sugar

- 3 large eggs

- 1 cup heavy cream

- 1 teaspoon vanilla extract

- 1/4 teaspoon salt

- Parchment paper (for lining)

Instructions:

1. Preheat the Oven

Preheat your oven to 400°F (200°C).

2. Prepare the Pan

Line a 9-inch springform pan with parchment paper, making sure the paper extends above the edges of the pan for easy removal.

3. Mix the Batter

- In a large mixing bowl, beat the softened cream cheese until smooth.

- Gradually add the sugar and mix until well combined.

- Add the eggs one at a time, mixing after each addition.

- Pour in the heavy cream, vanilla extract, and salt, and mix until smooth and creamy.

4. Pour and Bake

Pour the batter into the prepared pan. Bake for 25-30 minutes, or until the top is deeply browned and the edges are set while the center is slightly jiggly.

5. Cool

Remove the cheesecake from the oven and let it cool at room temperature for about an hour. Then, refrigerate for at least 4 hours or overnight for the best texture.

6. Serve

Once chilled, remove the cheesecake from the pan and slice it. Serve plain or with your favorite toppings.

Enjoy your delicious burnt cheesecake!
