Ingredients:

- 1 whole chicken (about 3-4 lbs)

- 4-6 garlic cloves (peeled and smashed)

- Fresh herbs (like rosemary, thyme, or parsley) – a few sprigs

- 2 tbsp olive oil or melted butter

- Salt and pepper (to taste)

- Optional: 1/2 cup white wine or chicken broth (for roasting)

- Optional: 1 small onion (quartered)

  

Instructions:

1. Prep the chicken

- Preheat your oven to 400°F (200°C).

  

- Pat the chicken dry with paper towels to help the skin crisp up during roasting.

   

- Season the cavity of the chicken generously with salt and pepper. Stuff it with 1 halved lemon, a few garlic cloves, and some fresh herbs (like a sprig of rosemary or thyme). You can also add a small onion if desired.


2. Prepare the marinade 

- Zest one lemon and then juice it, discarding any seeds.

   

- In a small bowl, combine the lemon zest, lemon juice, olive oil (or melted butter), and smashed garlic cloves. Stir well.

   

- Season the marinade with salt and pepper to taste.


3. Season the chicken

- Rub the marinade all over the outside of the chicken, making sure to cover the skin evenly. You can also lift the skin of the chicken (around the breasts and thighs) and rub some of the marinade underneath for extra flavor.

5. Roast
