Ingredients:

For the Filling

- 2 cups cooked and shredded chicken (or beef, cheese, or beans)


- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)


- 1/2 cup diced onions (optional)


- 1 tsp cumin (optional)


- Salt and pepper to taste


For the Sauce

- 2 cups red enchilada sauce (store-bought or homemade)


- 1 can (15 oz) diced tomatoes (optional)



Other

- 8-10 corn tortillas

- Additional cheese for topping

- Olive oil (for frying)


Instructions:

1. Prepare the Filling

- In a bowl, combine the shredded chicken, half of the cheese, diced onions, cumin, salt, and pepper. Mix well.


2. Warm the Tortillas

- Heat a small amount of olive oil in a skillet over medium heat. Lightly fry each tortilla for about 10-15 seconds on each side until pliable. Drain on paper towels.


3. Assemble the Enchiladas

- Preheat your oven to 375°F (190°C).


- Spread a thin layer of enchilada sauce on the bottom of a baking dish.

   

- Take a tortilla, add a portion of the filling (about 2-3 tablespoons), roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas.


4. Add Sauce and Cheese

- Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well covered. Sprinkle the remaining cheese on top.


5. Bake

- Cover the baking dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.


6. Serve

- Let cool slightly before serving. Garnish with sour cream, avocado, cilantro, or sliced jalapeños if desired.
