My Favorite Tom Yum Soup Recipe

   Tom Yum Soup is a popular Thai dish known for its hot and sour flavors. It typically features a clear broth flavored with ingredients like lemongrass, kaffir lime leaves, galangal, fish sauce, and lime juice. The soup often includes mushrooms, tomatoes, and shrimp or chicken.

-4-5 kaffir lime leaves, torn into pieces

-3-4 Thai bird chilies, smashed (adjust for heat) 

-200 grams (7 oz) mushrooms, sliced

-200 grams (7 oz) shrimp, peeled and deveined 

-2 medium tomatoes, cut into wedges 

-1 small onion, sliced 

-3-4 tablespoons fish sauce (adjust to taste)

 2-3 tablespoons lime juice (adjust to taste)

-1 teaspoon sugar (optional, to balance flavors)

-Fresh cilantro leaves for garnish



Instructions:


1. Prepare the Broth

- In a pot, bring the chicken or vegetable broth to a boil.


- Add the lemongrass, galangal, kaffir lime leaves, and Thai bird chilies. Simmer for about 5 minutes to infuse the flavors.


2. Add Vegetables and Protein

- Add the sliced mushrooms, tomatoes, and onion to the pot. Cook for about 5 minutes, or until the vegetables are tender.


- Add the shrimp to the pot and cook until they turn pink and are cooked through, about 2-3 minutes.


3. Season the Soup
