Here's a simple recipe for making a mocha cake:


Ingredients

For the Cake:

- 1 ¾ cups all-purpose flour

- 1 ½ cups granulated sugar

- ¾ cup unsweetened cocoa powder

- 1 ½ tsp baking powder

- 1 ½ tsp baking soda

- ½ tsp salt

- 2 large eggs

- 1 cup brewed coffee (cooled)

- ½ cup vegetable oil

- 1 tsp vanilla extract

- 1 cup buttermilk or milk


For the Coffee Buttercream Frosting:

- 1 cup unsalted butter (softened)

- 3 ½ cups powdered sugar

- 2-3 tbsp brewed coffee (cooled)

- 1 tsp vanilla extract

- A pinch of salt



Instructions:

1. Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.


2. Prepare the Cake Batter

- In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.


- In another bowl, whisk together the eggs, brewed coffee, oil, vanilla extract, and buttermilk.


- Gradually add the wet ingredients to the dry ingredients, mixing just until combined.


3. Bake the Cake

- Divide the batter evenly between the prepared pans.


- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.


- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.


4. Make the Coffee Buttercream Frosting

- Beat the softened butter in a large bowl until creamy.


- Gradually add the powdered sugar, beating on low speed until combined.

5. Assemble the Cake

- If the cakes have domed tops, level them with a knife.


- Place one cake layer on a serving plate or cake stand. Spread a layer of coffee buttercream frosting on top.


- Place the second cake layer on top and frost the top and sides of the cake with the remaining buttercream.


6. Decorate (Optional)

- Decorate with chocolate shavings, espresso beans, or a dusting of cocoa powder if desired.


7. Serve

- Let the cake set for a bit to allow the flavors to meld, then slice and serve.
