Easy Homemade Cherry Pie Recipe

- 6-8 tablespoons ice water


For the Cherry Filling

- 1 tablespoon lemon juice

- ¼ teaspoon salt

- 1 tablespoon unsalted butter (for dotting)


For Assembly

- 1 egg, beaten (for egg wash)

- 1 tablespoon coarse sugar (for sprinkling)



Instructions:

Prepare the Pie Crust

- In a large bowl, mix the flour, sugar, and salt.


- Add the chilled butter and cut it into the flour using a pastry blender or your fingers until the mixture resembles coarse crumbs.


- Gradually add the ice water, 1 tablespoon at a time, mixing just until the dough comes together.


- Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 1 hour.


Prepare the Cherry Filling

- In a large bowl, combine the cherries, sugar, cornstarch, lemon juice, salt, and almond extract (if using). Mix well and set aside.


Assemble the Pie

- Preheat your oven to 425°F (220°C).
