- 1 envelope (about 2 1/4 teaspoons) unflavored gelatin

- 3 tablespoons (45 ml) cold water



Instructions:

1. Prepare the Gelatin

- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to soften.


2. Heat the Cream Mixture

- In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. If using a vanilla bean, add the seeds and the pod to the mixture.


- Heat the mixture over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot (but not boiling).


3. Dissolve the Gelatin

- Remove the saucepan from heat. Remove the vanilla bean pod, if used.


- Stir the softened gelatin into the hot cream mixture until fully dissolved.
