Super Easy Fruit Tart Recipe

Ingredients:

For the Crust

- 1 1/4 cups all-purpose flour

- 1/2 cup unsalted butter, cold and cut into small pieces

- 1/4 cup granulated sugar

- 1/4 teaspoon salt

- 1 large egg yolk (optional, for added richness)


For the Filling

- 1 cup milk

- 1/2 cup granulated sugar

- 3 large egg yolks

- 2 tablespoons cornstarch

- 1 tablespoon unsalted butter

- 1 teaspoon vanilla extract


For the Topping

- Assorted fresh fruits (e.g., strawberries, blueberries, kiwi, raspberries).

- 1/4 cup apricot jam or fruit glaze (optional, for shine)



Instructions:

Prepare the Crust

1. Preheat Oven

Preheat your oven to 350°F (175°C).


2. Make the Dough 

In a food processor, combine flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. If using, add the egg yolk and pulse until combined. If the dough seems too dry, add a tablespoon of cold water at a time until it comes together.


3. Chill the Dough

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.


4. Roll Out and Bake

On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork to prevent bubbling.


5. Blind Bake

Line the dough with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, remove the weights and parchment, and bake for an additional 10 minutes or until the crust is golden brown. Let it cool completely.



Prepare the Filling

-Heat the Milk

In a saucepan, heat the milk until just simmering. Remove from heat.


-Mix Yolks and Sugar

In a bowl, whisk together the egg yolks and sugar until light and creamy. Add the cornstarch and mix well.


-Temper the Egg Mixture

Slowly pour the hot milk into the egg mixture, whisking constantly to avoid curdling.


-Cook the Custard

Return the mixture to the saucepan and cook over medium heat, whisking constantly, until thickened and just starting to boil. Remove from heat and stir in the butter and vanilla extract.


-Cool

Transfer the custard to a bowl, cover with plastic wrap (press the wrap directly onto the surface of the custard to prevent a skin from forming), and let it cool to room temperature.


Assemble the Tart

-Fill the Crust

Spread the cooled custard evenly into the cooled tart crust.


-Arrange the Fruit

Decoratively arrange the fresh fruit on top of the custard.


-Add Glaze (Optional)

If using, heat the apricot jam until it becomes liquid. Brush the glaze over the fruit to give it a shiny finish.


-Chill and Serve

Chill the tart in the refrigerator for at least an hour before serving to allow the custard to set properly.
